Daging Tumis Kedelai

Bahan :

600 gram daging has dalam sapi, iris melintang tipis-tipis (1/4 cm)

1/2 sendok teh merica bubuk

1/2 sendok teh garam

100 gram tepung maizena

minyak untuk menggoreng

2 sendok makan kedelai putih goreng

Saus :

1 sendok makan minyak

50 gram bawang bombay, iris halus

1 buah cabai merah, iris menyerong tipis

1 sendok makan kecap asin

1 sendok makan saus cabai bawang

1 sendok makan saus tomat

125 ml air

1 sendok teh maizena, larutkan dengan sedikit air

Cara Membuat :

- Pukul-pukul irisan daging hingga agak lebar.

- Aduk dengan merica dan garam hingga rata

- Gulingkan dalam tepung maizena hingga rata. Goreng dalam minyak panas hingga matang dan kering. Angkat dan tiriskan.

Saus :

- Tumis bawng bombay dan cabai hingga layu. Bubuhi kecap, saus cabai dan saus tomat. Aduk rata.

- Tuangi air dan larutan maizena, aduk hingga kental.

- Masukkan daging goreng dan kedelai, aduk rata. Angkat.

- Tambahkan cumi-cumi, aduk hingga berubah warna. Tuang air, masukkan gula pasir dan tekokak. Tutup wajan.

- Aduk bumbu kari dengan bumbu halus dan santan kental hingga rata.

- Aduk sayap ayam dalam bumbu dan biarkan terendam selama 1 jam.

- Tiriskan sayap ayam, celup masing-masing dalam putih telur kocok.

- Gulingkan ke dalam tepung berbumbu hingga rata.

100 ml santan kental 

1 sendok teh air jeruk nipis

20 helai daun kemangi, cuci 

Haluskan :

4 butir bawang merah

4 siung bawang putih

3 butir kemiri, sangrai

2 cm kunyit 

1/2 sendok teh merica butiran, sangrai

1/2 sendok teh ketumbar, sangrai

1/4 sendok teh jintan, sangrai

1 sendok teh garam

1 sendok teh gula pasir

Cara Membuat :

- Rebus ampela dengan air secukupnya hingga lunak. Tiriskan.

- Panaskan minyak, tumis bumbu halus hingga harum. Masukkan serai, daun jeruk dan hati ayam. Aduk hingga berubah warna.

- Masukkan ampela, air jeruk dan santan. Didihkan hingga kuah kental dan seluruhnya matang.

Cara Membuat :

Tumis bawang putih sampai wangi, lalu masukkan cabai rawit, petai, daun bawang dan tomat yang telah dipotong-potong, tambahkan air. Biarkan sampai mendidih baru masukkan ikan sarden. Biarkan sebentar, lalu diangkat.

Bahan :

1 ons teri kasar, dibuang kepalanya, 1/2 ons rimbang, 1 papan petai, 600 cc santan dari 1 butir kelapa, 3 buah belimbing wuluh, 1 sendok teh gula pasir, minyak goreng untuk menumis

Bumbu ;

1 ons cabai, 1 siung bawng putih, 2 butir bawang merah, terasi secukupnya.

Cara Membuat :

Semua bumbu dihaluskan lalu ditumis dengan minyak sampai harum. Tambahkan santan dan gula pasir. Biarkan santan sampai keluar, minyaknya dan agak menyusut atau mengering. Tambahkan rimbang, petai yang sudah dikupas, belimbing wuluh yang sudah dibelah dan teri. Setelah semuanya matang dan empuk diangkat. Lebih lezat jika disantap dengan rebusan daun ubi atau lalapan lainnya.

Cumi Masak Hitam

Bahan 

1/2 kg cumi-cumi basah, bersihkan jangan dibuang tintanya, 1 batang serai, dimemarkan, 1 ssendok teh asam jawa, dilarutkan dalam air garam, minyak goreng dan air secukupnya.

Bumbu halus :

5 buah cabai merah, 2 siung bawang putih, 3 butir bawang merah

Cara Membuat :

Tumis bumbu yang telah dihaluskan dengan minyak sampai harum, tambahkan serai, lalu cumi-cumi. Aduk sebentar, baru tambahkan air dan air asam. Masak sampai matang.

Kentang Telur

Bahan 

1 buah kentang, dipotong persegi empat tipis

2 butir telur ayam

1 batang daun bawang

5 buah cabai merah, dihaluskan 

Garam secukupnya

Minyak goreng secukupnya

Cara Membuat :

Kentang digoreng sampai matang. Telur dikocok, tambahkan cabai, daun bawang yang telah dirajang halus, garam dan kentang, aduk-aduk rata lalu digoreng dengan minyak panas sampai matang.

Kacang Panjang Pedas

 Bahan 

1 ons kacang panjang

1 ons teri medan

1 ons cabai hijau, dipotong serong

1 potong tempe, dipotong dadu 

2 papan petai

1 buah tomat masak, diris-iris

3 butir bawang merah 

2 siung bawang putih

Garam secukupnya

Minyak goreng, untuk menumis

Cara membuat :

Tempe goreng. Teri juga di goreng. Kacang panjang digoreng setengah matang. Bawang merah dan bawang putih dirajang halus, lalu ditumis sampai wangi, kemudian masukkan sekaligus petai, cabai hijau dan tomat. Aduk rata, tambahkan garam secukupnya. Setelah setengah matang, masukkan teri, kacang panjang dan tempe yang telah digoreng. Aduk rata lalu angkat

Bahan :

1 buah labu siam diiris tipis tipis memanjang seperti batang korek api 

1/4 kg udang yang sedang besarnya dibuang kepalanya

750 cc santan dari 1 kelapa

Minyak Goreng untuk menumis

Daun salam dan laos

Bumbu ysng dihaluskan : 

8 Butir bawang merah

2 siung bawang Putih 

6 buah cabe merah

garam dan gula secukupnya

Cara membuat :

Panaskan minyak, kemudian tumis bumbu yang sudah dihaluskan sampai matang, masukkan daun salam dan laos. 

Masukkan udang lalu aduk aduk sampai udang matang. 

Tuangkan santan, aduk-aduk supaya santan tidak pecah dan didihkan. 

Terakhir masukkan irisan labu siam.

Tahu Telur

Bahan :

1 buah tahu putih besar

1 butir telur ayam

100 gram kol

50 gram tauge

1/2 batang daun bawang

1 batang seledri

1 butir bawang merah

1 siung bawang putih

3 sendok makan kecap manis

1 sendok teh petis udang

4 buah cabai rawit

Garam dan lada secukupnya

Cara Membuat :

Tahu dipotong dadu lalu digoreng bersama telur ayam yang telah dikocok terlebih dahulu. Setelah agak kering, angkat dan pindahkan pada sebuah piring.

Kol, daun bawang, seledri diiris halus. Tauge dibuang akar dan "topinya" lalu diseduh dengan air panas sebentar. Tiriskan kemudian taburkan di atas tahu telur, juga rajangan kol, daun bawang dan seledri. Setelah rata di atas tahu telur, lalu siram dengan sausnya.

Saus :

Bawang merah dan bawang putih dihaluskan. Cabai rawit diiris-iris. Kemudian campurkan semuanya ke sebuah mangkuk bersama petis, kecap manis dan 6 sendok makan air masak atau kaldu. Tambahkan garam dan lada secukupnya lalu panaskan sebentar sambil diaduk agar petisnya larut.

Tahu Gunting

Bahan:

1 buah tahu putih

3 butir bawang merah

2 siung bawang putih

3 buah tomat

1 sendok makan cabai giling

Garam secukupnya.

Cara Membuat :

Tahu dipotong tipis melebar, lalu digoreng. Setelah matang digunting menyerong.

Bawang merah dan bawang putih dirajang. Tomat dipotong menjadi beberapa bagian. Kemudian ditumis bersama cabai giling dan tahu goreng tersebut, tambahkan garam secukupnya.

Sambal Goreng Tahu

Bahan :

2 buah tahu putih besar

1 papan pete

250 gram udang

4 butir bawang merah

4 siung bawang putih

1 sendok makan cabai giling

1/2 butir kelapa sedang, diparut

1 batang serai

2 lembar daun salam

Garam secukupnya.

Cara Membuat :

Tahu dipotong-potong kemudian digoreng, angkat lalu tiriskan. Pete dikupas. Udang dibuang bagian kaki dan kepalanya. Serai dimemarkan. Kelapa parut diambil santannya. Bawang merah dan bawang putih dihaluskan.

Semua bumbu ditumis dengan sedikit minyak, tambahkan pete, udang dan tahu lalu oseng hingga rata. Setelah itu tuangkan air santan dan biarkan mendidih sampai santannya menyusut. 

Tahu Baso Ayam

Bahan :

1 buah tahu putih besar

100 gram daging ayam

1 sendok makan tepung sagu

5 pasang kaki ayam

4 tangkai daun ketumbar

Garam dan lada secukupnya

Cara Membuat :

Daging ayam dicincang halus kemudian dicampur dengan tepung sagu, beri garam dan lada secukupnya. Setelah itu masukkan dalam tahu yang telah dipotong menjadi beberapa potong dan tengahnya dibelah, sisihkan.

Kaki ayam setelah bersih dipotong menjadi beberapa bagian lalu direbus dengan air sebanyak 1 liter, beri garam dan lada secukupnya sampai mendidih. Setelah itu masukkan tahu isi atau tahu bakso ke dalam rebusan kaki ayam tersebut. Tambahkan potongan daun ketumbar, biarkan sampai matang.

Tahu Petis

Bahan :

4 buah tahu kuning

1 sendok makan petis udang

2 cangkir kaldu

2 butir bawang merah

2 siung bawang putih

5 buah cabai rawit

2 buah cabai merah

2 buah cabai hijau

Garam secukupnya.

Cara membuat :

Tahu kuning dipotong-potong lalu digoreng, sisihkan. Bawang merah dan bawang putih dihaluskan. Cabai merah dan cabai hijau dipotong serong. Cabai rawit diiris bulat.

Petis dicampur bawang merah, bawang putih, cabai rawit dan 2 cangkir kaldu, aduk rata sampai petisnya larut.

Tahu ditumis bersama bawang merah, bawang putih, cabai merah dan cabai hijau, beri garam secukupnya. Setelah itu masukkan adonan petis sambil di aduk-aduk, sebentar kemudian angkat dan pindahkan pada sebuah piring. 

Tahu Bejeg

 Bahan :

2 buah tahu potong (tahu iris)

1 ons daging ayam

2 butir bawang merah

2 siung bawang putih

2 batang seledri

1 batang daun bawang

1 sendok teh kecap inggris

Garam dan lada secukupnya.

Cara Membuat ;

Daging ayam dicincang kasar. Bawang merah dan bawang putih dihaluskan. Seledri dan daun bawang dirajang. Kemudian semuanya ditumis jadi satu, aduk-aduk sampai rata, tambahkan kecap inggris, garam dan lada halus secukupnya. Setelah daging ayam matang, angkat dan masukkan tahu potongnya kemudian masak kembali dan aduk rata, biarkan tahu potongnya agak hancur, tambahkan sedikit daun ketumbar.


Tahu Gulung Saus Daging

Bahan : 

2 buah tahu gulung

2 ons daging ayam

2 butir bawang merah

2 siung bawang putih

1 sendok makan kecap inggris

2 sendok makan kecap manis

1 batang daun bawang

2 batang seledri

Garam dan lada secukupnya.

Cara Membuat;

Tahu gulung dikeluarkan dari pembungkusnya, kemudian digoreng menggunakan teflon. Setelah matang , pindahkan pada sebuah piring dan tahu dipotong membulat.

Daging ayam dicincang. Bawang merah, bawang putih, daun bawang dan seledri dirajang halus. Kemudian kesemuanya ditumis, tambahkan kecap inggris, kecap manis, garam dan lada secukupnya. Setelah daging ayam cukup matang dan tercampur dengan merata, angkat lalu siramkan di atas ptongan tahu gulung tersebut.

Tahu kipas

Bahan :
4 buah tahu goreng
2 butir bawang merah
6 siung bawang putih
1 sendok teh cuka
1 sendok teh gula pasir
6 buah cabai merah
8 ekor udang
1 ons daging ayam
1/2 batang daun bawang
1 batang seledri
Garam dan lada secukupnya

Cara Membuat :
Tahu goreng diiris diagonal (segitiga) lalu dibelah sedikit untuk diisi adonan ayam.
Daging ayam dicincang bersama daun bawang dan seledri, beri garam dan lada halus secukupnya. Lalu isikan ke dalam tahu dan selipkan juga udang yang telah dikupas sebatas ekor dan dibelah bagian punggungnya. Setelah itu digoreng sampai matang.
Saus ; Bawang merah, bawang putih dan cabai merah ditumbuk kasar lalu dicampur cuka dan gula pasir, tambahkan 1 cangkir air atau kaldu ayam, kemudian dimasak sebentar.

Tahu Tauco

Bahan :
1 buah tahu putih besar
2 sendok makan tauco
2 butir bawang merah
2 siung bawang putih
3 buah cabai hijau
3 buah cabai merah
1 sendok teh gula pasir 
Garam dan lada secukupnya.
Cara Memnbuat
Tahu dipotong menjadi beberapa bagian, kemudian digoreng. Bawang merah dan bawang putih dihaluskan. Cabai merah dan cabai hijau diiris-iris.
Tumis bawang merah dan bawang putih sampai harum, tambahkan cabai merah dan cabai hijau. Tumis lalu tambahkan tauco, 1 cangkir air atau kaldu, gula pasir, garam dan lada secukupnya. Sambil diaduk-aduk, masukkan tahu, biarkan sebentar agar bumbu meresap, lalu angkat dan siap dihidangkan.

Lumpia Tahu

Bahan :

2 buah tahu putih

1 ons daging ayam

2 butir bawang merah

2 siung bawang putih

1 batang daun bawang

2 batang seledri

8 lembar kulit lumpia

Garam dan lada secukupnya.

Cara Membuat 

Daging ayam dicincang bersama bawang merah, bawang putih dan tahu. Daun bawang dan daun seledri dirajang. Lalu semuanya aduk jadi satu, tambahkan garam dan lada halus secukupnya.

Ambil dua sendok makan adonan daging ayam, bungkus dengan kulit lumpia, rapatkan dengan putih telur, lalu digoreng.

Ketupat (Ketupat Sayur)

KETUPAT SAYUR 

Terdiri dari : -Ketupat, -Sayur Godog, -Daging Pedas, -Bubuk kelapa, -Kerupuk merah

1. KETUPAT

Bahan-Bahan :

250 gram

8 buah kulit ketupat

1/2 sendok makan kapur sirih

Air secukupnya

Cara Membuat :

Cuci beras hingga bersih kemudian tambahkan kapur sirih. 

Bilas lagi hingga bersih, lalu tiriskan.

Isi kulit ketupat dengan beras kira-kira sebanyak 1/2 atau 1/4 bagiannya (tergantung dari berasnya).

Rebus air dalam panci, jika sudah mendidih masukkan ketupatnya.

Rebus selama kira-kira 6 jam. Selama proses perebusan, ketupat harus tetap terendam air.

Cake Cokelat Buah

Bahan :

175 gr cokelat masak (dark cooking chocolate)

3 sendok makan brandy atau sari jeruk kental

50 gram gula bubuk, ayak 

100 gram margarin Blue band kocok lembut

2 kuning telur 

50 gram manisan ceri merah dan hijau, cincang

50 gram kismis, cincang

50 gram sultana, cincang

50 gram kacang mete panggang, cincang

175 gram biskuit manis, haluskan

150 gram whipping cream, kocok hingga kaku

Hiasan :

150 gram cokelat masak (dark cooking chocolate), serut kasar hingga menggulung 

2 sendok teh gula bubuk

Cara membuat :

Tim cokelat masak bersama brandy atau sari jeruk hingga leleh. Angkat dan biarkan hangat.

Aduk margarin Blue band dan gula bubuk dengan sendok kayu hingga lembut. Masukkan kuning telur, aduk rata.

Campur cokelat tim dengan biskuit halus. Masukkan margarin kocok, sultana, kismis dan ceri. Aduk rata. Masukkan mete cincang. Tambahkan krim kocok. Aduk hingga rata.

Siapkan loyang bongkar pasang berdiameter 18 cm. Tuangkan adonan ke dalam loyang, ratakan. Simpan dalam lemari pendingin selama beberapa jam atau semalaman.

Keluarkan dari loyang, hias dengan cokelat gulung. Taburi gula bubuk. Potong-potong dan sajikan.

Tip :

Brandy adalah liqueur atau minuman beralkohol yang bercitarasa jeruk. Jika tidak ada dapat diganti dengan rum atau sari jeruk kental.

Whipping Cream adalah krim kental atau kepala susu yang mengandung lemak susu lebih dari 40 % dan khusus untuk dikocok. Dijual dalam kemasan tetrapak dan harus selalu disimpan dalam lemari es.
